Baked potatoes and a beef roast of some kind, with salad and bread?

@looch: Roast chicken was going to be my suggestion too.

Risotto is actually pretty easy and impressive to many people. "Dressed up" salad.

What about a large Caesar salad topped with grilled chicken or grilled jumbo shrimp? Homemade dressing is easy to make.

@lady grey: I stuff it with cooked spinach and mushrooms, held together with a little bit of breadcrumbs and parmesan cheese.

I really like this recipe, it's really quick and easy. If I'm in a rush, I don't pound out the chicken, I just put everything on top of it. I also had a premade balsamic glaze and drizzle it over top. Really yummy!

This looks super fancy but it's easy! Takes 20 minutes. Don't bother trying to pry the fillet off the skin, just use two spatulas and transfer the whole thing onto a long oval plate with some lightly dressed greens and lemon wedges for a pretty presentation. You can remove the skin when you serve the portions at the table. Tuck the thin skinny end under itself so it's uniformly thick throughout.

I make some sautéed mixed veggies like tiny squash, cherry tomatoes, peppers, and onions with olive oil, garlic powder, and salt and pepper. Easy starch would be quinoa or couscous cooked in seasoned chicken broth with thyme, salt, and pepper.

I served this menu twice in one week for two dinner parties. I got those big packs of salmon from Costco with the two big fillets. The veggies and starch can be done ahead of time and reheated too. Throw a glass of Chardonnay and a bakery dessert and you're done!
