This was SO quick and easy -Tortellini with Broccoli and Tomatoes
Ingredients
1 package (9 oz) refrigerated cheese-filled tortellini
1 package (9 oz) broccoli cuts
2 1⁄2 cups quartered cherry tomatoes
1⁄4 cup chopped fresh basil
1 Tbsp grated Romano cheese
11⁄2 tsp olive oil
2 garlic cloves, finely chopped (or minced garlic)
How It's Made:
Follow package directions for cooking the tortellini.
Add broccoli for the last 2 to 3 minutes of cook time. Then drain.
Add tomatoes, basil, Romano cheese, olive oil, and garlic and toss together. The heat from the pasta will soften additional ingredients.

This is so simple I don't know if you can even really call it a recipe, but it's delicious!
And hamburger/chicken helper just came out with some new meals that have different twists on them - my kids really love the orange chicken one, I toss in some veggies and it comes with rice.

This isn't even really a recipe, but I made it the other night with turkey andouille sausage (instead of kielbasa) and it hit the spot:

Turkey tacos! Ground turkey, taco seasoning, and then shells and all the fixins! If you have leftover meat you can then throw it into a quesadilla for lunch the next day! This is like a two day meal for us.....it's awesome.

@HappyBaker: The tortellini sounds delicious!
I made some tortellini in tomato soup a month or so ago and it was delicious-tomato soup was onion, diced tomatoes, salt and pepper, broth, and greek yoghurt blended up. Then boil tortellini and add. Top with cheese!

I slice up kielbasa or chicken sausage, throw in a skillet with some onion, mushroom, and peppers. Then make some kind of rice or pasta on the side.

@mrsjyw: We have been doing fajitas a lot lately. Tortillas, bell peppers, onions, chicken or flank steak, avocado, then sour cream, salsa, and chips on the side!

The other day I made an American Chop Suey that the kids totally shoveled down. And so did we!
Apparently American Chop Suey is a New England thing...!
I browned ground turkey in a pan with chopped onions and peppers (garlic would probably be good too). I added it to jarred pasta sauce that was heating on the stove, then combined it all with elbow pasta and some broccoli florets. Topped it with lots of fresh parmesan. It made plenty for leftovers for lunch!

Tonight pizza:
Whole wheat crust from Trader Joes, sauce, and whatever toppings you have in your fridge. it's amazingly easy and delicious. Add a salad on the side and you are good to go.

Our go-to meal right now (because DH can't seem to get enough) is taking baby squash and small tomatoes, halving them, tossing them in olive oil, salt, pepper, and garlic, and roasting them for 20-30 minutes at 400 degrees until softened and there's a lot of oily tomato juices running around the pan. While that's going, boil some fusilli pasta and brown some sliced chicken sausage. Toss everything together, add a splash of marinara if you need a little more sauce, and add in fresh basil at the last second. Cover with a flurry of cheese and gorge with a cold glass of wine.
