I made these the other day, they were pretty easy:

Also, I totally missed the part about splitting the blondie batter, so I just swirled the cheesecake in and they still turned out well.

Definitely cheesecake. Some people think it's hard, but it's super easy, and everyone is always impressed.

@Torchwood: What would one use instead of flour? My cheesecake recipe calls for like 2 TBSPs or something of flour (not for the crust, in the filling).

@pui: I've actually never seen one with flour. Most recipes don't call for it. I would think cornstarch wouldn't hurt anything, if it just needed thickening though.

Bakerella has a pretty awesome flourless chocolate cake recipe. There are only about 5 ingredients and its delicious. But you need a springform pan, and to make the batter in 2 steps...so I don't know if that counts as 'easy'.
@pui: GF flour, or a smaller amount of corn starch, or just leave it out all together (in the filling)

@Mamaof2: Rice Krispies are not garuntee to be gluten free. They had a version that was gluten free but I was told they no longer make it. Rice chex can be used instead and is gluten free.

I am GF, my favs- flowerless chocolate cake (actually super simple!!), Rice krispies- but you have to buy the gluten free ones, or chex, or there is a natural version that is organic of rice krisps, or I just buy the gltuen free flour and make everything else using the normal recipe just with the gluten free flour! My mom made me a banana bread the other day, muffins all the time, peanut butter cookies! She just swaps out the flour!
(Fav thing- gf peanut butter cookies, and then icing (the bad stuff from the jar) in the middle, and make a sandwich! So sweet but so good! My mom always has these on hand for when the dessert doesnt work for me!!)

@Mamaof2: Please be careful about the Rice Krispies, they aren't GF. I was able to find an alternative version at Whole Foods that was labeled GF though. Also, if you want to "adult" them up a bit, Smitten Kitchen has an awesome recipe that uses browned butter.
