I usually put Corona in my taco soup, but don't have anything but Oktoberfest right now. Will that taste okay ?

I think it would be fine - might make it a little different than you're used to but I find that most recipes with beer in them don't end up tasting much like beer.
How much will you use? Could you just sub the beer with broth or something else entirely maybe if you're iffy about the pumpkin flavor? -
Yep. I don't discriminate when I make things with beer. Whatever beer I have on hand goes in.
