Fast, easy, not super healthy but definitely a comfort food: Banquet Homestyle Bakes Creamy Chicken and Biscuits.
Medium time and effort and healthiness: From-scratch pizza is great, especially for football days. I think the McCormick Italian seasoning grinder definitely adds a lot of flavor.
For healthy and filling, we love salmon kabobs. Marinate salmon (skinned and cubed) for 2 hours in a mix of soy, brown sugar, ginger, chopped/minced garlic, and crushed red pepper. Then skewer with fresh pineapple and red onion and broil for 12 minutes (flipping ever 3-5 minutes). Time consuming, but healthy and delicious and very filling. One of our favorite meals.

@lindsayinny, do you have a trader joe's nearby? they have a cabernet pot roast in a bag. I literally dump it into the crockpot with carrots and potatoes and onions, then turn it on It's my favorite. I've tried homemade pot roasts and this one is still my favorite and is the least fatty

@blackbird: I do! Is that a refrigerated item? Our store is small so I'm trying to figure out where I would find it. A bag item I can definitely do though!!

@LindsayInNY: pot roast can be as easy or complicated as you want to make it :). I made this recently:

I usually put in carrots and whatever else I have lying around (mushrooms, celery, chopped onion, etc). I like to pair it with mashed potatoes if there aren't already potatoes in it. Oh! And if you make mashed potatoes from scratch, throw some cloves of garlic in at the same time you're boiling the potatoes. They'll get just as soft as the potatoes, and when you drain and whip it all up you'll have a lovely taste of garlic in your mash :).
If you like you can brown the roast in a pan on the stove with a little olive oil before you put it in the crock pot, but it's not necessary. I've found that type of meat really doesn't seem to matter. Get whatever roast is on sale :).

I just posted this to the soup thread!
During the fall season, I love making chicken tortilla soup! I can eat tons of it and don't feel too guilty because it's pretty healthy overall. Here's the recipe:
2 cans chicken broth (14 oz)
2 cans diced tomatoes (14 oz)
1 can of corn - DRAINED (15 oz)
1 tbsp ground cumin
2 lg. chicken breasts cooked & shredded (I just use a rotisserie from the store)
1 can Black Beans (15 oz)
1 can Kidney Beans
1 cup of Medium Salsa
1 clove chopped garlic
Mix all ingredients together. Do not drain tomatoes or beans. Heat until boiling. Simmer 10 minutes and serve. You can have it over rice, or with tortilla shredded on top with sour cream, cheese and salsa. I usually skip most of those items and instead just top with fresh chopped avocado. If you're going to be out for most of the day, I usually dump everything in the slow cooker on low for a few hours - it gets really chunky and thick, more like a stew. So yummy.

@LindsayInNY: At our grocery store there's a section next to the steaks, and they all have roast in their names. Rump roast, pot roast, round roast, etc. I don't have any specific one I pick. I just pick the leanest looking one I see! Hasn't failed me yet We eat roast almost every week!

@lindsayinny, i had to ask a butcher and bought some chuck roast. It was fatty:( Trim before you cook it, for sure!!!!!!!!

@LindsayInNY: Same as Grizz, any roasts that are on sale. I prefer Eye Round Roast just because it's the least fatty (I always de-fat my roasts). It typically just has a big fatty bit at the bottom, but at least it's easy to get to. A lot of the chuck roasts have fat intermingled and I wind up demolishing the thing cutting it all out ;).

That takes it from expensive to pricey but reasonable I'm going to order the top roast since Chef Google said it's leaner than bottom roast. I'm grabbing some potatoes and the 3 seasoning packets. Mmmm, can't wait!!!
