C is getting baptized next week and I'm considering making the cake for afterwards. I am a decent baker but lately don't do much cooking at all.

Do you have a favorite, easy cake you make? I'm open to mixes if they taste good, and open to different flavors. I just feel like the icing should be light in color for a baptism (even though it shouldn't matter!)
