Vegetable Tian (Ina Garten) is one of my favorite side dishes. Lots of variety, looks pretty, tastes good. I use parmesan on top, not gruyere, and I drizzle with balsamic vinegar syrup. Tomatoes aren't really great right now, but they do turn out better once you roast them (and salt generously). You could use carrots in this, too! Anything, really...
No idea what we're having, though. In DH's family, Easter is always potluck style, and since it's E's actual birthday, I'm bringing the cake

@honeybear: that's always our go-to. It's the "fancy" green bean.

Carrot Souffle (and I don't like carrots)
6 medium carrots, cooked and mashed (if you chop them into small pieces it takes no time)
4 tbsp flour
4 tbsp sugar
4 egg YOLKS
4 egg WHITES
4 tbsp shortening
3 tsp baking powder
Preheat oven to 400 degrees
Mix with blender all ingredients EXCEPT for egg whites
Beat egg whites until stiff. Fold in egg whites to mixture
Pour into lightly greased pie dish
Cook for 30 minutes

Y'all are fancy. I am doing green bean casserole because I love it. I'm also doing a potato casserole. I'll probably do a fresh veggie too like balsamic brown sugar brussels.

@mediagirl: I know this is an old thread, but I just made this last night for DH's side family dinner, and it's my fave! Candied yams... drool.
Not a veggie side, but still delicious!
Usually we do corn, beans, carrots... something easy for the veggie side.

definitely going to try both the carrot souffle and the Veg Tian.... I usually do pineapple souffle/stuffing or Corn Souffle
