We are a grilling family so my gotos are honey garlic pork chops, sweet chili chicken skewers, pulled pork/chicken/beef, steaks. Throw together a veggie mix on the grill or pasta salad.

Panzanella salads, pasta salad (no mayo dressing, just pasta, grilled veggies, fresh cheese, and basil mixed with olive oil and a light vinegar/dijon dressing), grilled/roasted whole fish.

My fav is fajitas on the grill. I marinate thin cut chicken in EVOO and spices and we grill that whole, then I cut up peppers/onions and put just a little evoo on them and put them in a foil pack to toss on the grill. soooooo good.

@hilsy85: what's panzanella salad? I love pasta salad with italian dressing! It's my go to summer potluck haha.

@locavore_mama: basically a bread salad--I usually do toasted bread cubes (big pieces), fresh mozz, fresh heirloom tomatoes, red onion, and basil. Sometimes I'll add grilled shrimp, or grilled zucchini. I always use this dressing:

Summers are SUPER hot here (like 110 degrees!) so while we love grilling, we actually end up crockpotting a lot more!
If we grill, our favorite is just to throw on some tri-tips rubbed with Costco's mesquite seasoning and brushed with some Stubb's BBQ sauce. We'll usually do 2 of those, plus some sausages to have for easy meals during the week (see entree salads below!) Corn and sweet potatoes will cook on the dying coals.
If we crockpot, we'll do a lot of shredded braised meat. Our favorite chicken for tacos is 2-3 pounds of chicken thighs coated in a packet of chicken taco seasoning and 1 cup of salsa (we buy those small cans of Herdez salsa because its the perfect portion). 4 hours in the crockpot on LOW and shred!
Pulled pork is 3 pounds of pork shoulder or country style ribs coated in salt, pepper, and onion powder with a few tablespoons of Worchestershire sauce and 2 bay leaves all day on low in the crockpot. This can work as carnitas, or you can add BBQ sauce when you shred the meat for pulled pork sammies.
Another favorite is crockpotting a big tray of chicken wings for 4 hours on low and then crisping them under the broiler for a few minutes (keeps the house cool!) Buffalo wings we crock seasoned simply with salt, pepper, and garlic and then toss them in butter/hot sauce before crisping them in the oven. Big entree salads! We make huge Cobb salads with whatever meat we happened to grill with lots of avocado and honey mustard dressing. Or a salad with nuts and strawberries (and feta for me!) with poppyseed dressing. Greek salads with yogurt dressing. You get the idea.
And nothing like LOTS of ice cold fresh fruit for dessert.

I just like summer fruit, lol. Watermelon, local berries, tree ripened peaches.
