Sauteed zuchinni, chopped rotisserie chicken meat, frozen peas, and marinara over pasta. So good and simple and ready by the time the pasta is boiled.

Usually tacos! I always have some homemade beans in the freezer. Do some quick rise and it's so easy.

Lately I love spreading guacamole on toast and topping with a runny fried egg. Mmmmm...

I usually make random sautees with a bunch of vegetables and some sort of meat in pan, cooked in coconut oil with lots of seasonings.
Today: sliced sweet potatoes, brussel sprouts, carrots, onions, and turkey keilbasa sausage all cooked together.
I also find making soups and chilis super easy. I always have either tomato sauce or organic chicken broth on hand, which both are easy bases. Then i just start throwing stuff in!!

If my husband isn't home for dinner, my go to meal is always pasta (angel hair or spaghetti), olives, tomato (preferably sundried), spinach or kale, feta, and olive oil.
If he's home, then turkey tacos it is!

For me, thrown together means not cooking, so that's sandwiches or maybe heating up prepared soup.
