My amazing boss of 12 years retired this year - Dec 31st was his last day. His wife had been retired for 2 years so they were excited to start this next chapter. Then she suddenly passed away on Dec 30th. My heart breaks for him
His wife always made all his lunches and dinners so I wanted to make a bunch of individual portion size dinners that freeze well - no soups - he is def a meat and potatoes guy!
Anyone have any good easy ones? I am not sure what freezes well besides lasagna
I'm not so sure about freezing things in individual portions, but maybe finding smaller sized aluminum casseroles so they aren't so "family size"? Lasagna, stuffed shells, mexican lasagna (flour tortillas, refried beans, tomato/onion/corn/black beans, cheese, and enchilada sauce-- and you could add meat).. hmmm I'm having a heart time thinking of more "meaty" freezer meals.
