My amazing boss of 12 years retired this year - Dec 31st was his last day. His wife had been retired for 2 years so they were excited to start this next chapter. Then she suddenly passed away on Dec 30th. My heart breaks for him 
His wife always made all his lunches and dinners so I wanted to make a bunch of individual portion size dinners that freeze well - no soups - he is def a meat and potatoes guy!
Anyone have any good easy ones? I am not sure what freezes well besides lasagna

God how heartbreaking 
I'm not so sure about freezing things in individual portions, but maybe finding smaller sized aluminum casseroles so they aren't so "family size"? Lasagna, stuffed shells, mexican lasagna (flour tortillas, refried beans, tomato/onion/corn/black beans, cheese, and enchilada sauce-- and you could add meat).. hmmm I'm having a heart time thinking of more "meaty" freezer meals.

Oh man, that is so sad.
Some freezer meal ideas: shepherd’s pie (with mashed potato on top), chicken pot pies, sausage/egg/cheese breakfast biscuit sandwiches, pulled pork (he could throw it on a roll to make a sandwich), chili, meatballs.

How incredibly sad!
I have a really easy lasagna recipe I can wall you that freezes perfectly if you are interested! My husband also enjoys frozen enchiladas, personal chicken pot pies (a normal pot pie but in one of those small foil containers), frozen burgers (you could make them or buy the ones from Costco), and beef stroganoff.

@T.H.O.U.: would I cook the meatloaf or leave it raw with cooking instructions? I know he likes meatloaf!
@LBee: yes please!
Also - how do I know how to tell him to cook the stuff? Just say 350 for 30 mins? 375 for 25 mins? That is where I need help too!

@Mamaof2: Put masking tape instructions on each container. Or you could go fancy and print up your own labels, but that seems like overkill 
Re: your meatloaf question. We leave it raw - it tends to dry out if we don't.
You should also get him a bunch of steam fresh individual veggie packs!

@Mamaof2: nope just patty it up and put in the freezer. You can just roll it up in tin foil or maybe get those disposable foil mini loaf pans. Cover with tin foil and write the baking instructions on the top with a sharpie. Once the meatloaf is de thawed it cooks normal.
The easiest meatloaf recipe I use includes a Lipton onion soup packet and egg milk and breadcrumbs. Really easy.

I have a large muffin tin, and I freeze Chili (spaghetti sauce, etc.) in the muffin tin. Then just dip it in some warm water, pop them out and put in a freezer safe bag. He can then microwave them (or or two depending on how hungry.) This will work for anything you can scoop. Poor guy - heartbreaking.

So sad I would definirely put instructions on everything! Pulled pork for sandwiches, chili, taco meat...anything very very easy
