I'm trying to do the same - and lower our meat intake at the same time.
Vegetables: I like to simply roast them in the oven for dinner sides (baby potatoes, carrots, broccoli, cauliflower - anything goes) with OVOO, salt, pepper and garlic powder. 400 degrees for 15-20 min.
Also make homemade yam fries, DD loves them. Same process as above, just cut into fries and a bit longer in the oven
Veggies and dip is a popular snack at our house. Cucumber, cauliflower, carrots and celery are favs.
Fruits: strawberries, raspberries, blueberries, watermelon and mango are favourites at our house.

I buy a big package of spring mix/spinach and put that on something or eat a salad of it at nearly every meal, like wrapped into a breakfast burrito, or on top of a sandwich.
I keep frozen steamer bags of veggies stocked at all times so that there's something easy to make for dinner if I don't have time to roast veggies.
I also like to keep fruit around in many different, easy to grab forms. Precut berries, applesauce pouches or containers, diced pears, clementines. If it's already ready to go, I'm much more likely to grab it as a snack.
I'm also working on getting my kids to eat more veggies. They'll at least try them if I sprinkle them with parmesan. And I found these noodles made from veggies that they love. https://www.birdseye.com/product/spinach-lentil-pasta/

Currently we eat a lot of cauliflower. Chop it up and roast it with EVOO/SP, use leftovers in a pureed soup with chicken/veggie stock, or boil 1/2 head with 1 or 2 potatoes and make a low carb mash.
My go to healthy salad: Spinach (or mixed greens) balsamic salad w/ avocado, cucumber, strawberries, and walnuts. Sometimes I'll add feta too.
Green smoothie, 2 adult servings: 1 apple, 1 frozen banana, 2 c. frozen berries, 1/2 orange, 1 tbs. flax seed, large handful of spinach. Throw it all into a blender with some water and blend.
Blueberries, oranges, and bananas are the fruits I buy and use the most. We love fresh pineapple too!
Edit: Every week I make variations of oatmeal cups. They are a healthy grab and go breakfast for busy days. Our favorite is banana and blueberry. Let me know if you want the recipe. Kid friendly too!

I am to have a "veggie box" at least three times a week. I pack steamed string beans, broccoli or zucchini and then raw grape tomatoes, cucumber and bell pepper. I can't really eat raw carrots and celery, so I usually don't have those. I love kohlrabi, asparagus, artichokes, all kinds of things, though.
Then I aim to have 2 servings of fruit, which is super easy because I love fruit! I will eat whole fruit no problem, but my true love is fruit salad. I get boxes of whatever looks good at Costco and then I just cut/mix enough for a few days. When it starts to turn, I freeze it and then use it in tofu smoothies.

@Autumnmama79: Yeah I like most vegetables roasted best! My favorite is zucchini. I love artichokes but my husband doesn’t so I never make those.
We mostly eat green beans, carrots, zucchini asparagus, sweet potatoes, and butternut squash.
Fruit-wise I like berries, and apples. I love fruit salad so maybe I need to start buying more premade fruit salads so that it is convenient to pack for lunch. They are so expensive though, So I probably ought to make my own

I tend to eat more vegetables than fruit. Usually for lunch I will make a salad with bagged baby spinach/rocket, some cut up iceberg, a lebanese cucumber, carrot, celery, some tinned corn and grilled peppers. I'll either add any leftover chicken meat or a tin of tuna, mix with olive oil, salt and balsamic vinegar. I also do steamed cauliflower and broccoli, with olive oil, salt and lemon and have that as a dinner side or lunch leftover.

We do sheet pan dinners a lot. We're vegan, but this is super easy to implement if you eat meat too. Cook the meat + veggies on a tray. It's great, and you're sure to get a lot of veggies.
I eat bananas every day - in either smoothies or on granola.
I put avocado on everyyythinngggg - hashes, pasta, sandwiches, etc.
Other than that, I buy a big container of spinach each week, and eat it with nearly every meal. If we have pasta, I just pop the pasta right on top of a bed of spinach.

Veggies (and seafood) are my favorite food groups. I cook a lot of green beans, broccoli, cauliflower, and Lima beans. I like to roast Brussel sprouts. Zucchini and squash are another favorite. I make salads a lot. You can quickly sauté spinach or kale with some garlic. I also love greens. They are labor intensive and my husband doesn’t like them, so I don’t make them very often.

It’s so interesting to hear about all the different things people eat! We usually make a big kale salad on Sunday night or Monday (just kale massaged with olive oil, topped with pre-shredded carrots and cabbage, some kind of soft cheese crumbles, dried cherries, honey roasted sunflower seeds, shredded marinated beets) and eat that throughout the week, adding dressing the day of. I always get a big thing of pre-cut butternut squash this time of year, and I’ll roast that in the beginning of the week and top the salad with it. We don’t have tons of time to prep food so that’s quick. I also like steamed veggies like broccoli and green beans. We always have cherry tomatoes on the counter because they’re easy to graze on (I swear they taste “fishy” this time of year though so I haven’t been eating as many). We do a lot of raw bell peppers, but I also roast slices for 15 minutes at 450 for burrito night and for salads.
Fruit-wise this time of year I try to leave the berries to the kids because they are so expensive, and I’ll eat apples, oranges, clementines. Things look very different when produce is in-season.

Since we moved to Asia, we’ve had to adjust to the new foods. Fruit has been less problematic, but a lot of our normal veggies are harder to find and I don’t know how to cook the Thai veggies. We eat fruit for dessert at lunch and dinner. I usually eat veggies at lunch and dinner (kids and DH eat at work/school).
Fruit: pomelo, passion fruit, guava, pineapple, golden pears, dragon fruit, something called champu (?), and when in season, star fruit and mangosteen. Also, I eat avocados almost every day at lunch. I always have a few of those fruits in my fridge and we’ll eat other things as well.
Veggies: frozen spinach and peas, fresh brocoli, carrots, cucumbers, and various salad mixes depending on what I can find.

I still have some lingering salad aversions from pregnancy and can’t eat a lot of greens, so I eat endive and/or raddicho the most instead. I just can’t deal with non-crunchy greens. I love raddichio chopped up and tossed with couscous and white beans
I also love finely slicing raw zucchini with a mandolin so it’s super thin, and toss w olive oil, lemon juice, basil, and parmesean. Sooo tasty and simple. Or same thing except with fennel and apple finely sliced

We eat a bagged salad mix with half of our dinners. It’s not as cheap as fixing your own but it’s easy and we end up eating more vegetables with less waste. The other half of our nights we have steamed (ahem microwaved) broccoli. We’ve tried several different brands and love Trader Joe’s frozen broccoli. You just microwave it and it’s perfect steamed broccoli. For fruit, I eat an apple most afternoons. I try to eat it when I’m thirsty because that’s when I am least likely to get tired of them and they feel the most refreshing.. I also do watermelon+ feta + basalmic glaze for dessert often. I buy the watermelon prechopped and it’s expensive but worth it.

@travellingbee: I've been eating paleo for a few weeks, so since I can't fill up on grains and legumes, I really have no choice but to eat more veggies and fruit. So, there are all the usuals (steam or roast broccoli, salad, bananas or apples with almond butter, my husband makes a fruit salad of strawberries, blueberries, and raspberries almost every morning that we all eat).
But some "new" things I've been trying are lots and lots of spaghetti squash and riced cauliflower. I use those as bases for almost everything. I get tired of the "plain meat + vegetable side" formula pretty quickly, so using the spaghetti squash and riced cauliflower helps me make "familiar" meals without the grains. I make a really good spaghetti casserole (tastes like pizza) with the squash, or I use it as a noodle base for a thai curry. I use the riced cauliflower in a really good buffalo chicken casserole recipe, in a "friend rice" recipe, and as a base for indian curries.
I also learned that plantains or thinly sliced and roasted sweet potatoes make a great base for chicken salad. With the plaintains, you literally just get 2 ripe plantains and mash well (I use the food processor), then spread thinly into a pan until browned; flip and repeat. With sweet potatoes, I peel them and then make thin slices out of the whole potato--so I get a pretty big base-then I just brush with oil of choice and sprinkle some seasoning on and roast at 425 for 10-15 min until they get crispy.
I also make meatballs with minced carrot/onion/celery--if you mince it fine enough, they taste just like regular meatballs. And you can make sweet potato hash for breakfast.
I also make super delicious zucchini fritters and sweet potato latkes, paleo style.
Basically, the base of every meal and snack is an unprocessed veggie or fruit. I've never been a vegetable lover, but I've found a lot of ways to make veggies be a big part of my diet now that I can't have grains.
Pictured is an example of using sweet potatoes or plantain fritters as a base for chicken salad. It's really, really good.

I eat broccoli, brussels sprouts, romanesco, zucchini, asparagus, and green beans for the most part. Some cauliflower.
I also like baby arugula - both wilted and as salad. As well as spinach in the same manner.
I take 2 Amazing Grass wheatgrass tablets a day as part of my supplement routine as well.
I generally have a serving of veg at lunch and again at dinner. I also like to eat fermented veggies like kimchi and sea vegetables like nori or seaweed salad, as they are more nutrient dense.
I don't eat fruit right now (I'm on a low carb diet), but in the past I basically always snacked on fruit or had a piece of fruit for dessert. My kids are fruit bats so we ALWAYS have like a zillion kinds of fruit at home, but I always try to have easy fruits - clementines, apples, bananas, berries, and nectarines/peaches. If its in season, I'll do a big seedless watermelon in the summer and hack that up too.

I don't love veggies! But for breakfast I usually have a fruit smoothi and add spinach.
I like roasting cauliflower and sweet potatoe and broccoli. I made the kids eat at least one veg per meal so I try to follow suit!

I love fresh fruit! In this cold season, I'm eating lots of apples, pears, oranges, but summer is the best time for fruit. I love cherries, peaches, nectarines, strawberries, etc.
As far as veggies, I like raw baby carrots and cauliflower for snacks. Baked acorn squash and beets are also tasty. Asparagus is also fun to eat because of the way it changes the smell of your urine! I also love the bright colors of bell peppers.

I buy frozen onion and pepper mix and sautee with baby spinach that I buy in the big pack. We eat that with dinner all the time, like mixed with pasta and cannelini beans or on pizza, etc. Sweet potatoes roasted with cinnamon is a favorite. I roast a butternut squash and a buttercup squash then puree together and make crustless squash pie with half the sugar and it is gone in one sitting. Any leftover squash goes in pancake/waffle/french toast/muffin batter or on quesadillas. We eat Mac n Cheese n Peas. Or sometimes with steamed broccoli. And I find it so easy to just heat up frozen veggies mixes before the kids get too fussy. Mostly I just try to add it to favorite foods however I can.
For snacks I always offer fruit - apples, bananas, pears, berries (fresh in season, frozen when not). Or carrots with hummus. In the spring and summer the kids love picking fresh peas, tomatoes, and cucumbers from the garden and eating them right away.
