My parents are coming down to help us move in a little over a week, and my dad's birthday was 2 days ago. I'm going to try to throw him a surprise party... But food is tricky.

My dad has high cholesterol and blood pressure, and thus requires heart healthy food. My mom is diabetic (recently), so she needs low GI food. My mom also has an extensive list of veggies she won't eat (she won't touch anything that has cooked carrot in it. Bell peppers, beans, and tomatoes are also on the banned list.) I have nutrition training - this should be easy, but the mere thought of most foods makes me nauseous, so cooking something elaborate is out of the question.

Can anyone suggest heart-healthy, low GI foods that work for a party? I'm trying to come up with a menu, and I can't come up with anything other than hummus, raw broccoli, and carrot sticks (there's the nausea again.)
