I made this tonight and it was so yummy i had to share. It's from the hungry hottie.
Rosemary White Bean Soup Recipe
Here’s what you need:
1 ½ c cannellini beans, cooked (or 1 15 oz. can, drained and rinsed)
1 large onion, chopped
1 tbsp olive oil
1 clove garlic, minced
½ branch fresh rosemary, de-stemmed
2 c vegetable broth
Salt and pepper to taste
Here’s what to do:
Place olive oil in a large pot and sauté onions until translucent.
Add garlic and cook 3 more minutes.
Add beans, rosemary and vegetable broth and bring to a boil.
Reduce temperature to low and simmer for 10 minutes.
Blend until smooth using an immersion blender.
Add salt and pepper to taste and enjoy.
