I've never made them before. I've got them soaking right now while I'm at work. I was thinking of boiling them with some garlic, carrot greens and onions.
Are they like raw beans and take a while to cook?

OMG make Mujadarra!!!
http://www.food.com/recipe/mujadarra-168793
It's basically a middle eastern rice and lentil dish that is so so delicious. DD and I LOVE to eat it as dinner, or with dinner. DH doesn't get why I get so excited about it, but still, it's amazing!

@prettylizy: hahah ooh I love ME food. I'm making it to go with a rotisserie chicken and roasted beets. Do you think it will go? I can put more of a middle eastern spin on the rub I put on the chicken!
Is that one cup uncooked lentils? I have them soaking now so should I account for the lentils plumping up?

@locavore_mama: what type of lentils? My suggestions depend on that. If you are using red lentils, this Jamie Oliver recipe is the bomb.com.

@plantains: er. I will have DH check when he gets home. I want to say they were a brown color. I didn't even know there are different kinds of lentils!

@locavore_mama: I'm pretty sure that is cooked lentils, but I just pulled the first recipe I found on google. I'm sure there are better ones out there.
Man, now I want mujadarra for lunch! lol!

@plantains: oh I am def saving that recipe. Lentils + spinach in a soup? That will be awesome to make for LO when the weather gets cooler. She LOVES soup.

I've never soaked lentils before.
I either make soup or simmer then in chicken stock with a couple garlic cloves and chopped onions while I'm preparing the rest of dinner. I just pick out the garlic when serving.
Orangette has two great lentil recipes. I like the red lentil one and the green lentil coconut one. Yummy!

@oliviaoblivia:
I just assumed they needed to be so I dumped them in water this morning. Oops.

I saute veggies then add lentils, a bay leaf, and chicken broth and let them boil covered for about half an hour to 45 minutes. They don't take long to cook, and I actually don't even soak mine beforehand. Mmm, lentils
@prettylizy: sounds yummy!

@locavore_mama: I googled it and the Internet says if they are soaked they are more easily digestible. Un-soaked lentils need a bit more cooking time. They'll be delicious either way!

@locavore_mama: it is perfect cool weather soup.
Soaking your lentils will be fine I'm sure. They will prob just cook a lot quicker.

Lentils don't take very long to cook. maybe an hour, tops. I like to sauté some garlic, onion and chopped carrot for a few minutes and then sauté the lentils before adding liquid and a bay leaf (I usually use stock and several shakes of hot sauce) Bring to a boil and then cover and simmer for like...half an hour? 45 minutes? Maybe not that long? Lol, sorry, I usually just let them go until they're tender.
Sometime I like to brown sliced sausage before adding in the onions and such. My current favorite is curried lentils and sweet potatoes (which I'm making tonight).

I don't have recipes handy right now, but I use lentils pretty frequently. The dish varies by lentil type, here are some favorites. Red or yellow lentils usually get puréed in broth with a touch of béchamel to make a creamy soup. Black lentils get cooked in the slow cooker with lots of Indian spices for a super yummy dal (the recipe I use is from the book The Indian Slow Cooker). Green lentils either go in a soup with a chicken broth-tomato base and some kind of leafy greens like spinach or kale, or in a cold summery salad with bulgur, parsley, red onion, and an olive oil-vinegar-lemon dressing.
