I make it a point not to count, but now I feel like I should!
What's your daily diaper count? Feel free to break down into poop versus pee diapers... or not haha.

it's hard to know. seeing that he's at daycare during the day.
But on a weekend, I change 6-8 times.
1- morning
2 - after breakfast before nap
3 - after nap
4 - After lunch (before nap)
5- After Nap
6- Before going to bed
It's usually 6 times unless he poops 2x then we can go at 7 diaper changes. He's a peeing machine so if he drinks alot of water it might sometimes go to 8. YIKES!

It's times like these when my Baby ESP app (Android) really rocks cause I can just look at my baby's stats by week, month, year, etc. So as not to go crazy, here's what my little girl averaged so far, keeping mind that sometimes a diaper had both wet and poo in it:
month 1: 12.3 diapers/day - 8.1 wet, 6.2 poo (partial month data)
month 2: 9.5 d/d - 6.6 w, 4.4 p
month 3: 9 d/d - 7.3 w, 3 p
month 4: 10 d/d - 7.7 w, 3.7 p
month 5: 10.3 d/d - 8.1 w, 4.5 p
month 6: 8.9 d/d - 7.7 w, 3.7 p
month 7: 7.4 d/d - 6.8 w, 2.2 p
month 8 6.5 d/d - 6 w, 2.3 p
month 9 6.5 d/d - 6.1 w, 2 p
month 10 6 d/d - 5.8 w, 1.3 p (partial month data)
We started solids (rice cereal) @ 6 months and you can really see the amount of poo diapers lessen as the food she ate became more chunky.

Elliot is 5 months old, and he eats every 2 hours. I change his diaper after his feedings, when he is most bothered by it. Since he is using cloth, I don't mind changing him so often.

Along these lines, does anyone have suggestions on the number of cloth (AIO or pocket) diapers that I'd need to last me a couple days between washes?

That's a lot of diapers in a day! I change every 3 hours, and use a disposable at night.
The number of diapers you need partially depends on how often you plan to do washing. I loathe washing diapers, so I only do it every 4 days or so. I use a cover and insert system, so I can use the covers more than once. I have 24 liners, and I can also use cloth prefolds as a liner in a pinch.
