I want to make taco pizza pinwheels for dinner. We've done this a ton as pizza style (make a pizza, roll it up, cut, cook as little individual rolls. I'm stuck on what "sauce" to use. I was thinking mayo + taco seasoning, but I wasn't sure how that would do in the oven. Enchiladas sauce could be an option too I guess, but it's so thin. Any ideas?

Sour cream and taco seasoning? Or cream cheese and hot sauce?

@MrsH: That's a great idea. Totally sparked an idea: cashew cream (like sour cream) + veggie cream cheese + taco seasoning and a bit of hot sauce. It'll be thick enough and not have a super strong taste like the mayo would.

Salsa? So many variations and consistencies.

I would do salsa, and then do sour cream on the side or on top after they are cooked.

I would flavor plain tomato puree with taco seasoning, and use that.

Or, refried beans mixed with spices or taco seasoning?

When we do taco pizza, it's half refried beans and half salsa mixed up

I'd vote refried beans and taco seasoning mix -- or you could thin the beans with salsa or enchilada sauce.

When I have a lot of time on my hands (hardly ever these days), I make a roasted pepper sauce. I roast red bell peppers, peel and puree. It's got a flavor that makes people ask "what is that?" in a good way.
