Dh lives/works out of town during the week, so it's just DS (nearly 1 year old) and I. I tried cooking all week but feel like I ended up with a lot of wasted food...I made crockpot meatballs/rice, creamy crockpot spaghetti, and avocado chicken enchiladas.

I recently went back to work after having the summer off and need quick and easy meal ideas to get ready when I get home from work (5ish). I usually feed DS as soon as I get home since he goes down for the night around 7. Any help or ideas I can get would be great! My brain is just fried and I'm at a food loss.
