I think mushrooms and goat cheese are delicious together. I made quinoa and added sautéed mushrooms, onions, zucchini and goat cheese a few days ago and it was yummy.

My go-to way of cooking mushrooms is just olive oil, salt and pepper, and THYME. Always thyme!! A bag of sliced cremini mushrooms cooked this way tastes awesome with ANYTHING. If you have any sherry or vermouth or a sweet wine, add a splash of that for a little more oomph.

@gingerbebe: I see the recipes calling for cremini mushrooms - are these the ones that you see everywhere or is this a special kind?

@Mamaof2: Cremini are just the brown sliced mushrooms at the store, instead of the plain white ones. Sometimes they are called "baby bella" mushrooms for advertising purposes, but the brown and white ones are usually sitting next to each other. White ones taste just fine - I just find the cremini have a little more mushroom-y flavor.

For white mushrooms: diced and cooked with soy sauce and garlic and served on little toasts.
For baby bellas: remove stems, dice and saute with garlic, add cream cease and parmesan, stuff mixture into mushroom caps and bake.

I love mushrooms too! Here is a hot mushroom dip recipe. Delicious on crusty bread or crackers.
Hot Cheddar Mushroom Spread
2 cups mayo
2 cups shredded cheddar
2/3 cup grated parmasean (real)
2 cans sliced mushrooms
1 envelope ranch salad dressing mix
Minced fresh parsley
Combine mayo, cheese, mushrooms and dressing mix
Spread into greased 9 inch pie plate
Bake uncovered at 350 degrees for 20-25 mins until cheese is melted
Sprinkle with parsley
Serve with cracker
