If we suspend reality and I get a reasonable work schedule and guaranteed financial success, I'd start a restaurant.
If I just automatically get all the training, education, etc. I'd become a hospital-based midwife.
In all honesty, though, I am generally very happy with my current field/education/training. I just need a new job and a new challenge.

@autumnlove: that's hopefully what i'm going to do! not so much because i want to, but because i need something with benefits because our whole mrs. bird staying home plan doesn't look like much of an option anymore. oh well. working on pre reqs, we'll see if i can actually get into the program, they're all so competitive!

I would be a speech-language pathologist working with victims of traumatic brain injury in a hospital or rehab setting.
(I have my bachelor's degree in SLP but never went on to get my master's... yet! Our first baby came as a surprise and so I became a SAHM instead of going to grad school.)

reality suspended exactly the same as @septca: except ours would be a winery. All training, I'd be a midwife.
In reality I'm bored and am strongly considering switching to teaching.

Definitely a writer/illustrator/editor. Something that I could do part time or full time from home. And since we're suspending reality, I would make enough to warrant a nanny or a caregiver for the children so that I could work uninterrupted at home or at a coffee shop or something. Preferably with travel benefits

I think I would become a reading specialist. I keep considering it for real but the cost is holding me back since it will be awhile before I am willing to work full time again now that our first is on her way.
