We don't follow this rule but some ideas are: pasta's, salad, veggie soups, veggie stir fry, pizza with no meat, omelets with no meat...

We're not Catholic or vegetarian but we try to keep our meat consumption down to 2-3 days a week.
We eat a lot of beans--particularly lentils. And sweet potatoes, I love sweet potatoes. Sweet potato burritos, sweet potato enchiladas, sweet potato, black bean and quinoa chili...
I've also done orzo ratatouille (with eggplant, zucchini, onion and tomatoes), zucchini pasta with lemon (essentially sauteed zucchini slices tossed with pasta in a light lemony dressing).
DH loves eggplant parm, but I bread the slices in panko and bake them instead of fry.
Some nights when I don't feel like putting too much effort in I made fried rice and corn cakes with a chunky spicy black bean salsa and sour cream with hot sauce, dijon and honey dressing.
That's all I can think of off the top of my head.

i should be cooking a lot more but it is so hard since i am alone with ds so much!
i love corn cakes...the ones from cheesecake factory are the bomb.

I love to do black bean burrito bowls. Basically I do a big batch of black beans in the slow cooker and then we have brown rice, avocado, sour cream, salsa and cheese, or some combination of these things. Very Chipotle-esque on the cheap!
And tonight we're having stir-fry with shrimp.

I'm Jewish., but one of my favorite meatless meals is Spinach, mushroom, goat cheese, tomato, and egg pizza.

Breakfast for dinner, usually. We just had some delicious cheese enchiladas at our friends' house for lunch, though!

We have a standard go-to broccoli tofu stir fry that we eat a lot. Growing up Fridays were fish sticks and tater tots
Edited to add: we sometimes do a pesto pasta with a crusty loaf of sourdough that's mighty tasty.
