I pan fry on cast iron with a little bit of sunflower oil. When it's caramelized I add butter and spoon it on during the last few minutes.

I don't really know how because we don't have a grill so we don't often. Ill make it sometimes in the slow cooker for fajitas.

In the summer DH grills the steaks, in the winter, we either pan sear or bake in the oven. Our broiler function doesn't work though.

We're SUPER picky about our steaks and have a friend who is a chef at a 4 diamond steak house, so we're spoiled and make him cook them for us. The few times we've cooked our own we say "But it's not as good as they are when XYZ makes them..."

grill or sear in a cast iron skillet and finish under the broiler. We like our steak rare, so its a very fast meal to prepare!

WE do it the Alton Brown way! Sear it on a cast iron skillet stovetop, then finish it up in the oven to bake!

For those of you who sear it, do you oil the cast iron skillet? And what's on the meat?
I always seem to get hit by flying hot oil when I turn it up super high... so I tend to cook it at a medium heat, and it doesn't taste as good.

If its a final cut like a rib eye steak or t-bone I like to age the steaks in the fridge uncovered on a rack over 1-2 days. Then I take it out to temper at room temp or above for at least an hour. Then into a pan for a quick sear and baste in whole butter if I'm going for crust, then a brief rest then eat. Or, if its all about the meat itself, I'll skip the butter and the pan and just go into a 225-250f oven and slow roast it without any sear.

I'm going to try pan frying some strip loins tonight so I'm reviving this thread! Does it have to be a cast iron pan? I don't have one, so in that case would baking be better? Help!!! I need suggestions

@sunny: I melt a bit of butter and then brush it on my steaks, complete with salt, pepper, and Mrs. Dash steak seasoning. Then I sear it on both sides in the cast iron skillet and put it in the oven to bake. I never use oil.
@sslm: I don't know, but I would think you could use a frying pan.

@sslm: I've used a plain ol' frying pan and it's worked perfectly! I use a liberal amount of butter and fry it over medium-high heat for about 8-9 minutes on each side for medium-rare. I just use salt and pepper as seasoning.

Flank steak that has been marinated for awhile, then on the grill. Nice crust, great flavor.
@SSLM: I wouldn't cook a steak in a nonstick b/c I don't think it would get a good sear on it. I would look into sticking it under the broiler. Check this out: http://myyearwithchris.wordpress.com/2010/04/26/broiled-steaks/
