I'd continue to study religion. I'm getting my Master's right now and it's fascinating. If I could I'd probably just stay in seminary and take every class they offer.

I'd still be going for nursing!!
I think some artsy degree would be fun too - like photography, graphic designs, etc!

Photography or culinary school. Or if I were just taking a class I'd take a language....maybe French or Japanese.

Always enjoyed the photography classes I took back in the day. The nerd in me would take physics classes. Haha

A film class or a writing class. I've always wanted to learn about directing films and writing, particularly screenplays.

@BeachMama: Same here! I'd do photography, culinary school, or language school for Portuguese.
I'd also like to take classes on having a farm (I love goats and chickens!) and quilting, but I am secretly saving these for retirement
Oh and cheesemaking! I already know the basics but want to take higher level classes.

I'm already doing advanced practice nursing so maybe pastry school? I'd love to learn to make all those beautiful desserts. I wish I had the time

I did study what I wanted! Sociology & English. No regrets from me, no problem finding a job once I graduated unlike all those CNN articles bemoaning liberal arts degrees.
BUT
I'd love to go back for "real" sewing classes at a technical school! So cool.
