I deal with this all the time - My company make dance recital costumes and dress up costumes and we "employ" models from 3-19 years old. They usually get $50-75 a photoshoot. They also get breakfast and lunch and hair and makeup provided. Most mom's i think save the money for them.
If it were me I'd probably let theme pick out a toy to "spend" their money on as a reward for behaving during the day and save the rest for college/future. When they turn 17 and are begging me for a car I can have them use the money they earned and saved.
