@Reese: yes I did it was a complete impulse buy at 1am! I hope I don't regret it. I did take time to read a lot of reviews (between midnight and 1am, lol. And they convinced me).

My Instant Pot came yesterday (how does Amazon do that? I literally got the email that it had shipped and found it at my front door a half hour later, 24 hours after ordering) and made the chicken @travelgirl1 recommended for dinner tonight. It came out great, and the leftover broth is delicious - I'm going to use it to make risotto next!

@erinbaderin: we're close to you and I had the same thing happen. Checked my email and then minutes later found it in my porch.
I made this because I had peeled and cut sweet potatoes yesterday but couldn't stand turning on the oven in the heat. Delicious! I used 1/3 the sugar and they were still a little sweet.

Without chicken, with an extra can of black beans, without the chipotle pepper, and with fire roasted tomatoes instead of regular (trying to shop the pantry!). It was so good and so easy! The lime juice at the end is critical.

Mine arrived today. I cleaned it and immediately made risotto. First I cooked the shallots and toasted the rice (on the stove, I wasn't ready to try the saute function). Then cooked on high pressure for 6 minutes. It worked!

I cooked a whole chicken in my Instant Pot tonight. It turned out great. It was very tender and juicy. It only took 25 minutes once it came up to pressure.
I think I am going to try to make pork chops next. I am looking forward to making chili and soup in it this fall and winter.

@NCSUchick27: I'm not a big meat/chicken eater but your post definitely makes me want to try it in the cooker. When I made chili the other day, I added a tablespoon of rum at the end. That was my delish IP secret.

I made chicken wings in my Instant Pot tonight, and they turned out great. I took raw chicken wings, and seasoned them with some brown sugar bourbon grill seasoning. I put them in the Instant Pot under high pressure for 10 minutes with 2 cups of water. After they finished cooking I coated them in BBQ (DH won't eat buffalo sauce) sauce and put them under the broiler for 5 minutes per side. Yum!

I made Kalua Pig from Nom Nom Paleo tonight, and it was delicious! So much flavor! I added cabbage at the end as well, and everyone had seconds.
Also made chicken broth over the weekend, and it was so easy. I'm turning into an Instant Pot believer.

I found a huge resource. It's an FB page called Instant Pot Community. You have to be approved but then click on Files and there is a pot of gold waiting for you. Tried and tested recipes.
ETA- I just made an easy shrimp curry. Tasted way better than the regular way I cooked it because the flavors are just much more pronounced. First, I sauteed the shrimp and onions and then emoved from pot. Cooked very small cubed carrots & potatoes, boxed curry mix and water on high pressure for 6 minutes. Vented on quick release and put it all together to sit in the hot pot for a bit.

Tonight I made beef stroganoff in the Instant Pot. I used a recipe from the Great Food Fast pressure cooker cookbook by Bob Warden. It was super easy and fast.
I agree that the Instant Pot Community on Facebook is great. It will make you crave cheesecake though. A lot of people have been making cheesecake in their Instant Pots, and posting yummy looking pictures.

I made a really delicious pot roast last night. 1.5lb chuck roast in big chunks, browned on Saute, then added a chopped onion, a cup of celery chunks, and 1.5 cups of baby carrots. I mixed a packet of brown gravy mix, 1/2 a packet of au jus mix, black pepper, a bay leaf, and a 1/2 teaspoon of thyme leaves with 1 cup of cold water. 90 minutes manual setting, then went to bed.
This morning I poured off the gravy and put it in the fridge to solidify the fat. If I were to do it again, I might cook the meat and onions firsts and add the carrots and celery after 60 minutes. They taste wonderful, they're just soft, which DH won't mind at all. But it's just not much to look at.
I'm going to serve with mashed potatoes and a salad.

Thought i would revive this thread because last night i made fall off the bone ribs (one whole Costco sized rack) in less than 1 hour.

Basically had the ribs in for 35 minutes high pressure, let it release naturally (about 15 minutes), made the sauce (i used my own bbq recipe, or you could just use bottled sauce), put on broil for 5 minutes and then turned off the oven but kept the ribs in so that the sauce would continue to caramelize with the residual heat.
This was the first recipe where i was finally impressed with the Instant Pot!!

I made this recipe on Sunday to bring for lunch this week and love it. It's a very thick soup so you could add more broth to thin. I also think it would be really good if you used smoked sausage or ham instead of the turkey. It sort of reminded me of pea soup but better. It also freezes really well.

My favorite recipe is a super simple salsa chicken: rub 2lbs of chicken breast with salt, pepper, and garlic, then put in the bottom of the instant pot. Cover them evenly with 1 cup of salsa, and manual cook for 8 mins, then do quick release. I usually shred it and pour the rest of the cooking liquid over top for extra flavor.
We use this chicken for everything from eating over rice, to quesadillas, to sandwiches - super easy and good!
