My LO is slightly anemic. Our pediatrician recommended giving LO oatmeal, but it's not something he enjoys. So, I'm trying to find other iron-rich foods and snacks for my LO. Are there any that you know of or use?

Egg yolk! Spinach? I boil eggs and give LO the yolk. She loves it.

Spinach, kale, grass-fed lamb, prunes, lentils/beans
For a grain amaranth is high in iron. I think you can get that as a cereal. Quinoa, which you can get as a cereal simiar to cream of rice, also has iron but it contains some iron inhibitors soothe body doesn't absorb all the dietary iron available.

Our nurse practitioner said lamb is great for babies- maybe try that?
We've also had good luck getting LO to eat pureed beans.

My LO loves kidney beans and spinach. She pops the beans in her mouth like candy. For spinach, they sell these "spinach bites" in the vegan/vegetarian section of our grocery store. They are spinach and cheese nuggets and the LO loves them.

cooking in cast iron is an easy way to increase iron intake. i've heard cooking acidic things like tomato sauces in cast iron are even better for getting iron in!
