It's only Fat Tuesday once a year! How will you celebrate??
I had a cupcake this morning, and I'm currently pondering gumbo for dinner. Yummy

Ugh we have an amazing New Orleans restaurant by us and they're having beads and king's cake and everything the whole day! I am trying to have self control and not go for the sake of our budget!

I made chicken and andouille sausage gumbo this weekend, and today we'll be celebrating with pancakes! My childhood was split between Louisiana and the UK, so I try to work both in

My sister and Dad were supposed to send me a king cake, but I haven't gotten it yet...Still hopeful!! I guess I should make sure someone in my building didn't take it!
I guess I will have to go to trader joes and get some chicken andouille at lunch and make red beans and rice for dinner.

Maybe a chocolate covered Peep today. I'm WFH, so thankfully far from my favorite donut shop. Today's my weigh in day. I lost 2.4 lbs this week and am a little over 3 lbs away from goal weight. I'm trying to be good for a wedding we're attending this weekend where I get to eat steak and wedding cake.

We had peanut butter, banana and Nutella pancakes for breakfast to celebrate National Pancake Day, leftover butternut squash bisque for lunch, and for dinner I'm making a big pot of red beans and rice with andouille sausage and a pan of cornbread to celebrate Mardi Gras.

My Michigan friends keep posting about paczki's and I am jealous because I haven't found a bakery that sells them in Atlanta.

It's an oval shaped dessert decorated in the Mardi gras colors of purple, yellow, and green. It can have fillings like cream cheese, strawberry, etc or just be plain. There are tons of variations but that's the basic king cake. Traditionally, there is a plastic baby in it and whoever gets the baby has to bring the next king cake. We generally start eating them on king's day (January 6) through today. But now you can get "king cakes" year round in other colors.
I picked up a doughnut king cake today and had crawfish fettuccini for lunch. Yum!

Pancakes for us! DH makes the best pancakes in the world, with a bunch of nutmeg and a cup of melted butter in the recipe. I will weigh 10lbs more tomorrow morning.
