kale chips. Rip the leaves up, cover in oil and salt. Bake on low for a while. Flip over once. You can find all sorts of recipes on line for specifics but they are delicious.

What about tossing it into some soups or cooking it with some quinoa? Quinoa with kale, raisins, and all his favorite veggies is really good! The fruit in there (raisins, cranberries, pineapple) really helps give the quinoa a nice flavor and could hide the kale a little if he doesn't like the taste of it.

We put kale in chicken tacos. Simmer the kale in tomatillo salsa until it's nice and tender, add in cooked, shredded or diced chicken. Dollop of sour cream on a warm corn tortilla. It converted my kale-hating husband!

I make kale salad with honey mustard dressing, toasted walnuts and dried cranberries. To soften the leaves I rub them with salt before I add the other ingredients. I also add he walnuts right out of the oven. Yum!
I also love Portuguese kale soup, and white bean salad with kale.

Kale mashed potatoes!! DH is now OBSESSED with kale after being introduced to them in kale mashed potatoes. just make mashed potatoes the way you normally would and then add a ton of chopped up kale...delicious.
Another way i got him into it was making a pasta dish with kale. It was pasta with canellini beans, chicken sausage and kale. so delicious!

Smoothies! I do kale, banana, almon milk, and some almond butter. Delicious!

Kale sautéed in chicken broth with garlic and pine nuts then sprinkled with Parmesan cheese. You could even throw some bacon in there (because bacon makes everything better). The kale just soaks up flavor from the broth and is soo good!

@mrsbookworm: I also like to prep the kale the same way as for kale chips, but put it on pepperoni pizza. SOOOO GOOOD.

Just wanted to add that my husband doesn't like kale, but I make corn and kale enchiladas and he loves them.

Kale chips, and in smoothies! I don't do the nutty protein type shakes but they work really well in fruity smoothies too! It's amazing to see a green smoothie and find that it tastes like fruit!

Bake at 550 degrees after adding a little bit of olive oil and salt. I also like red pepper on them. Bake for apx 15 min (until crispy)

kale chips, kale soup, in smoothies, and also mixed in with GUAC! just boil it to soften, chop into tiny pieces, and stir into guac. can't even taste it and it blends right in. and who doesn't love guac?

Wow! GReat timing. I started making Kale chips again this past week. We don't eat veggies too much and tried it once about a year ago for baby's sake. Anyway, after a couple of servings, DH is making them now. We put garlic salt and olive oil and bake them. Just tonight, DH said, OH WOW, these are actually pretty good.

I had it tonight (I'm not a kale-lover) simmered in stock and red wine vinegar with cubed sweet potato, diced onion, onion and sliced mushrooms. Over quinoa.

I LOVE kale, and I used to hate it! Kale salads are my favorite--the trick is to "massage" the leaves for a few minutes with the dressing (I usually just use olive oil and lemon juice) and then let it sit for about 5 mins to continue softening it. My fave is to then mix that with raddicchio, white beans, scallions, parmesan, and couscous (and salt and pepper, and a teensy bit of sugar too).

I LOVE kale! DH used to hate it, but I've turned him! Haha. This is a great recipe: http://www.simplyrecipes.com/recipes/raw_kale_salad_with_balsamic_pine_nuts_and_parmesan/
If you don't think the raw kale will be a hit, you can also blanch it first and then dip into ice water - it'll turn a pretty bright green and then you can just refrigerate it until you want to put the dressing on it.
Another idea is to add it to quiche or soup! I've also seen lots of recipes combining kale + sweet potato, but haven't tried any yet.

Totally agree on the smothies! I love kale, apple, banana. Or even add some pineapple in there. Really yummy!
