Anyone else like to make big batches of breakfast items on the weekend to freeze? I find it's the only way for us to get anything healthy into us in the mornings. They're just too crazy otherwise LO ends up eating cheerios, fruits and yogurt all the time.
This morning I made "power muffins"! Blueberry, greek yogurt, rolled oats and whole wheat flour. I didn't like the consistency of the batter at the end so I added 3/4 cup of milk to it to loosen it up. It is surprisingly moist! And I also only use 1/3 cup of sugar and had no honey so omitted that as well.

I also make mini spinach/broccoli quiche, pancakes and waffles to freeze!
Anyone make breakfast in bulk on the weekends?
If she did, I would think they are a great bake-ahead breakfast. You just slice it up like a pie and warm up a piece in the morning.
