I need to plan so thank you for this thread!
Sun- steak and lobster tonight for Mother's Day
M- sweet, sticky and spicy chicken, rice and carrots
T- Grilled chicken paninis & field green salad
W- meatballs & rice
Th- grilled cheese and tomato soup
F- BBQ hamburgers , Caesar salad and chips
Sat- I'm hosting a baby shower so we will have leftovers from the party

I am not totally committed to this plan yet but I am thinking:
Turkey meat loaf with sweet potato fries
cheeseburger casserole
Crock pot picadillo with cauliflower gratin
All from skinnytaste....
I usually plan three meals and the leftovers get us through the rest of the weekdays!

DH won't be home for dinner two nights this week, so I just planned:
Chickpea & vegetable curry with brown rice
Crockpot teriyaki chicken with roasted broccoli
Breaded cod filets (aka fish sticks from trader joes!)
On the nights he is not home I will have leftovers or something easy like grilled cheese and salad.

M: sweet potato, black bean and spinach enchiladas
T: Chana saag
W: sweet potato corn cakes with garlic dressing
Th: sweet potato Mac and cheese or black beans and rice
F: Grilling, TBD
We have a ton of sweet potatoes to use up this week!

Sunday-Wednesday - pineapple chicken over rice
Thursday/Friday-spaghetti or steaks (we always have both on hand)
I try to do one big meal to last us through the first part of the week. It's a lot cheaper since we don't have to buy lots of extra ingredients and we waste less food.

@mamimami: Have you made the crock pot picadillo before? I'm planning on whipping that up this week, and just wondering how it tastes
PS: Also making the Hawaiian Teriyaki skinnytaste burgers tonight. Yay, for Skinnytaste, haha.

@Seattlemom: I thought that picadillo sounded good, too! The Puerto Rican Beef is so good-and you have to have it with the sliced avocado!

S - Chicken fajitas, guac, and black bean salad
M - Italian wedding soup, salad, and sour dough
T - Meatballs, asparagus, pasta salad
W - Bible study (friend provides dinner)
Th - Tuna cakes, broccoli, salad, fried potatoes
F - Caribbean Coconut Chicken casserole
S - out with friends

Its going to be a chicken heavy week (lots of chicken in the freezer to use up).
Sunday: Eating out.
Monday: Crockpot chicken posole.
Tuesday: Chicken tikka masala.
Wednesday: Fish stick tacos.
Thursday: Steaks, sweet potato, corn on the cob.
Friday: Chicken enchiladas.
Saturday: Leftovers.

@mamimami: Its basically this recipe but with about 3-4 cups of cooked chicken (i.e. leftover rotisserie chicken). I use one big can of Las Palmas brand enchilada sauce and 1 big can of hominy (instead of the 2 smaller cans). I also always add carrots because DH likes them and any veggie odds and ends we have laying around. If I'm super lazy or in a rush, I substitute all the other ingredients (chilies, garlic, onion, cilantro, etc.) with a cup of salsa. I also use chicken broth instead of water, but only because I keep it on hand at all times.

Ooh, I am going to do my meal planning while LO is in school tomorrow morning. So many good ideas on this thread!
This weekend we had: peppered flank steak with a fresh tomato salsa, leek mashed potatoes, and a yellow and green bean toss. Tonight we had a gruyere, scallion, and pea quiche.

i'm all on my own this week since DH is traveling for work...well, me and DD that is!
Monday - salad or some kind of quinoa salad picked up from grocery store today
Tuesday - cauliflower mac and cheese
Wednesday - Chicken fajita brown rice bowl (chicken, peppers, onions, avocado over some brown rice and lettuce)
Thursday - leftover cauliflower mac and cheese
Friday - Veggie pizza (hopefully DH gets home in time for this!)
