This is great for meal prep too. For kids it’s more deconstructed pieces plus hummus and pita.

I haven't come up with a plan for next week yet but this week was:
Chicken Caesar stuffed twice baked potatoes with roasted broccoli.
BBQ meatloaf muffins with mashed sweet potato topping and roasted Brussels sprouts.
Hibachi style chicken and veggies with a mustard/tahini sauce.
Orange chicken over cauliflower rice with sugar snap peas

I haven't started planning for next week just yet but here's what we had this week!
- Breakfast Frittata for myself for the week with sauteed bell peppers and onions (make extra peppers and onions for later in the week)
- Spaghetti and Meatballs (frozen Trader Joe's turkey meatballs, zoodles for me)
- BBQ Pulled Pork, Mac and Cheese, and Cole Slaw (mac was prepared and frozen for maternity leave, cabbage was planned leftovers from St. Patrick's day that I just shredded and mixed with sauce, reserve pork before adding BBQ for later in the week)
- Gnocchi with Chicken, Broccoli and Sun Dried Tomatoes (frozen gorgonzola gnocchi from Trader Joe's, prepared grilled chicken from my freezer stash, and frozen broccoli)
- Steak with baked sweet potato and broccoli (make extra steak, again frozen broccoli)
- Pork Egg Roll Bowl (more St. Patrick's day cabbage and pork reserved from earlier in the week)
- Steak Quesadillas with onions and bell peppers (use planned leftover steak, reserved onions and peppers from the frittata prep)
Glad to get some new ideas from this thread! That shawarma bowl looks great!

Buffalo Chicken tacos (recipe is in my head)
Terriyaki Turkey Meatballs with Bok Choy (Instant Pot recipe - from mommyshomecooking)

I love these threads. I feel like I’m always struggling for meal ideas. We are slowly (so slowly!) trying to move to more plant-based meals. It was going really well but I’ve feeling overwhelmed lately so I’ve been really slacking on meals (like tonight we’re visiting my mom so we’re probably getting Hawaiian BBQ takeout ). I need to get back to eating more vegetables.
My plans for the next few days:
-stuffed peppers (Filling will be rice, lentils, beans, tomatoes, and frozen veg mix with spices probably)
-tostadas (I usually do regular tortillas over hard shells), I’ll probably just have Mexican lettuce wraps instead of a tortilla.
-garbanzo and red lentil curry with coconut milk (I’ll probably add frozen broccoli and peas to this).
-soba noodle bowls (tofu, steamed kabocha and eggplant, shaved carrots, peanuts, with a sesame dressing).
-simple vegetable soup (cabbage, carrots, celery, kabocha squash and noodles).
-mushroom Stroganoff.

@psw27: Did the ramen turn out pretty salty? I always have trouble with that with saucy Chinese recipes but this looks intriguing.

@peachykeen: I used low sodium soy sauce so I didn't find it too salty. You could definitely reduce the soy sauce to 1/2 a cup and up the water and you wouldn't notice. It's a pretty yummy one! I can't wait to have the leftovers for lunch!
