Love this topic! We have 3 this weekend, here's what I'm doing!!
Saturday: Fruit Salsa with cinnamon/sugar chips & relish tray (at the request of host)
Sunday: creamy cucumber salad & tortilla rollups (day at a private pond)
Monday: Creamy Corn Dip with Fritos, Pioneer Woman's Pig Cake

tortilla rollups: I just do flavored rollups (usually jalapeno cheddar), with cream cheese/sour cream mix & can of rotel. EDIT: oh and taco seasoning -- forgot that. I knew I was missing something!!
Fruit Salsa: my own recipe I do a thing of sweetened frozen strawberries, kiwi, mango, and mandarian oranges. Chopped up (the strawberries gives it a little liquid.) And then I make cinnamon sugar chips or buy Stacy's cinnamon sugar pita chips if I'm feeling lazy

And the Pig Cake is incredible, I make it for almost every summer pot luck we go too...it's always requested and I'm kind of "known" for it If they only knew it was a box cake!

We are doing 7 layer dip for one (but probably more like 5 layer dip based on what's in the pantry!) with tortilla chips, and bringing a grape salad to the other (http://www.tasteofhome.com/recipes/creamy-grape-salad)...sounds kind of weird, but I tried it at a gathering a few weeks ago and it's soooo good!

TOROROJO: i've always wanted to do layered dips because they're so popular at potlucks but i can never find the right transparent glass or dish for them. lol. it's on my shopping list to buy. and creamy grape salad is a good one! I've had it before at office parties and it's really good. totally forgot about that one...
