Baz Luhrmann's movies have great soundtracks (The Great Gatsby, Moulin Rouge, Rome & Juliet)... but for me, I've always thought that Forrest Gump had a soundtrack that just really fit the movie. Also, Great Expectations introduced me to a lot of great music. (Reservoir Dogs and Pulp Fiction were also pretty great.)
Bee likes sweeping scores: Jurassic Park, Gettysburg, Last of the Mohicans ("so good"). Also: Philadelphia.

All the twilight movies have WAY better soundtracks than the movies themselves. Reality Bites is probably my favorite.

The ear/torture scene in reservoir dogs stands out to me as one of the best uses of music in film!
I think the movie Stealing Beauty had a really well done soundtrack too...a lot of portishead. Very haunting and sexy. It was perfect for the movie

For classical, I love Legends of the Fall, and (total cheeseball disclaimer here!) Titanic, just not the Celine Dion part. The rest of the score is beautiful though!
