We are having a chili contest at work and I need a really good recipe so I can win! =)

The Emeril vegetarian chili is AMAZING! (Just a note - I halve the amount of serranos it calls for and it is still quite hot. And I like hot!)

The Pioneer Woman's is probably good.
I'd give you mine, but it's so simple. If you want to win, here is what I'd do - go to a health food or bulk food store and get some high quality cayenne, chili, and maybe some chipotle spices. It'll just cost a few dollars. Also, when you cook your onions, make sure you cook them until they are almost carmelizing. Then simmer it really well - 2 hrs at least.

This white chicken chili recipe is amazing. The only thing I change is to add some lime juice and I use another can of green chilis rather than add some jalapenos
