What are your meal plans for next week? I'm having a bit of trouble, and need some ideas. I need a couple more meals.
So far I have:
Mon - salmon + rice + brussel sprouts
Tues - spaghetti + meatballs
Wed - chicken fajitas

We need to go grocery shopping tomorrow. So far we have turkey meatloaf muffins haha. Oh and my husband wants red beans and rice.

I'm actually excited about our meal plan! I'm sure that excitement will wane but enjoying it now haha.
1. Seared Steak & Creamy Chipotle Pan Sauce

3. Sweet & Sour Pork Stir Fry

We are still working through our freezer meals but our plan for this coming week includes:
Buffalo chicken wraps (slow cooker recipe)
Pioneer Woman lasagna rolls (already made in freezer)
Baked salmon with mayo, dill, panko

Taco salad
Pizza
Waffles
Pasta Salad
Stir Fry
Sides are salad, watermelon, strawberries, grapes, and carrots and hummus.
I'm due soon so I wanted food that didn't involve too much work or to many perishables.

I am all about simplicity these days, especially during the week. If I plan something complicated it doesn't happen. I've also been meal planning one month at a time and I love it. Though in a few weeks I will be on summer break so I am excited to have a bit more time to plan and cook again!

Monday- grilled chicken over arugula and chickpeas, tomato avocado salad
Tuesday- fish tacos, cilantro-lime rice, sauteed peppers
Wednesday- carbonara pasta, salad
Thursday- oven fried chicken, mashed potatoes, green beans
Friday- beef stroganoff, egg pasta, peas

@petitenoisette: how do you meal plan a month at a time? Do you just buy meat and other stuff in bulk? How about produce, etc? I guess I look for sales on produce each week, so I don't know how monthly meal planning would work.

@Pumpkin Pie: I don't really look at sales on groceries anymore since we don't eat much meat. When I do a veggie for a side I might look at what's on sale but I generally don't worry about it because I feel like how I really save money is not buying much in the way of prepared foods and shopping at Aldi.
I make a plan in my google calendar but I constantly move stuff around. It's mainly just that I love not having to come up with more meal ideas once I've done it for the month. Doing it once is so much easier than 4 times for me. This doesn't really work if you're looking for a lot of variety because I think of 10 meals and repeat them. It would be a lot harder and not worth it if I was trying to think of 30 different meals!

@Pumpkin Pie: I am trying to meal plan monthly now. I look at what we have in the pantry and fridge (like leftover BBQ sauce) and try to come up with ideas that way. I also look at the grocery deals. Like Aldi's had a really good deal on chicken breasts the other week so I bought a couple packs and froze the breasts individually in the deep freezer. I am not going to eat all that chicken this month but will likely make 1 or 2 recipes each week with it. I looked at my recipes, talked with DH and figured out which chicken recipes to make in June.

Still not 100%. I'm trying not to do a big grocery shop this week, and instead had DH pick up a few essentials. At the moment I am toying with:
Crock pot creamy pork chops (2 meals. Both with corn and salad on the side)
Something with the oodles of tilapia we have frozen
Ditto with the oodles of shrimp we have frozen
Indian Chicken curry
Korean Tofu
Cilantro lime chicken with roast veggies

We are still eating through my freezer meals (err, DH is, I'm juggling a newborn so I kinda eat what and when I can).
This week we'll pull:
- Thai chicken curry and basmati rice
- Spaghetti meat sauce + pasta
- Meatloaf and mashed potatoes
- Jambalaya
- Spicy Korean beef soup with rice
DS' meals will be:
- Broccoli cheese rice with chicken (freezer)
- Spaghetti and meat sauce with the family
- Turkey corn dogs
- Leftover CFA nuggets
- Korean seaweed soup and rice
Sides are fruit and frozen veg or fresh corn on the cob or bagged salad.
