I’ve made a couple of frittata-style egg dishes in the muffin pan that turned out pretty tasty. It’s prettu simple. My best tip is watch your oven temp and cook time closely, you don’t want them over cooked.

This is a family recipe. I’ll include the hand typed cards (its old, lol). It is SO excellent and easy. You can adjust spice to taste

@Mrsbells: it is reallllly good. You could also make it in muffin tins for individuals. It’s my go-to for brunch.

@Mrsbells: I do quiche with a potato crust. IF you want a shortcut, you can use hashbrown potatoes from the freezer (but it's better with fresh potatoes)

I have done lots of different baked eggs - quiche, mini fritattas, egg casseroles etc. and they always turn out great. This dish though is fast and AMAZING.

I don’t have a recipe but just want to add to make sure you grease your muffin tin really really well. I didn’t once and I eventually had to throw out the tin because the eggs stuck so bad.

I make healthy egg cups often...usually 6 eggs plus some milk and my add ins gets me 8 cups for the week. I bake them at 350 for about 15ish mins. They are super yummy!

Some of my fave add ins: bacon & cheddar, feta/spinach/tomato, green onion & feta, turkey sausage/cheddar.

I have also made ones with bacon rings around the edge...that was a for a brunch...they were also yummy but not as healthy!
