Fluffy is what comes to mind when I am craving pancakes but I like IHOP (buttermilk) and Cracker Barrel (Momma's).

I don't really understand the question - what are crispy pancakes? I don't like my pancakes fluffy, I want them fairly thin and dense, but not crispy.

I've never had Cracker Barrel before! So I've only had fluffy pancakes...

Crispy on the outside, fluffy on the inside. It exists! It takes a griddle and lots of butter. My grandma made the best ones!

I like fluffy pancakes, but not spongy pancakes, if that makes sense. They aren't crispy but maybe a teensy bit crisp at the edges?
My favorite pancake recipe is one made without baking powder. Instead, you whip the egg whites separately and fold them in, and that makes the pancakes thinner but still fluffy without being spongy.

How about BOTH? The America's Test Kitchen recipe I use is definitely both. Crispy on the outside and fluffy on the inside! Yum!

I like cracker barrel pancakes but I never thought of them as crispy. They seem fluffy to me

I would be up for any kind of pancake, truth be told. I like the ones that come from a mix the best, the simpler the better (just add water, lol).

@gingerbebe: Mmmm definitely french toast. Or crepes. I like smaller, thinner pancakes. I do not like thick big ones at all. Way too much bread-- so I guess I like crispy?

I've never had cracker barrel pancakes, but crispy makes me think it's like a cracker? Or a cookie? Crunchy all the way through?

@Mrs. Lemon-Lime: Thick sliced challah if you can find it, but if not Texas toast or cinnamon swirl bread. Left out overnight to stale, soaked in beaten eggs mixed with a little milk, cinnamon, and vanilla. Fry in a pan with COCONUT OIL so good!! Maple syrup and breakfast sausage on the side. Nommmm.
