The summer meal thread got me thinking about [craving] potato salad! Does anyone have a good recipe they could share? Bonus points if it isn't too complex because I'm fairly useless in the kitchen

Equal parts mayo and sour cream, potatoes, onions, celery, salt and pepper and sliced boiled eggs.

I don't have the amounts of each thing because I go by what it looks like.
I put mayo, mustard, onions, dill relish, hard boiled eggs, salt, pepper, and some lemon juice.

I don't have a go to recipe but now I'm craving potato salad too!!!

This is a bit different than the creamy potato salad but: red potatoes, 1 part lemon juice, 1 part olive oil, few tablespoons red wine vinegar, chopped fresh basil & parsley. Serve warm or cold!
