does it need to be more like an appetizer/food food or a sweet treat? My default for potluck desserts are poke cakes-- you can make them from box mixes and they always turn out amazing...

make a baked turkey ziti with chopped spinach its so easy
boil ziti, brown turkey (season with salt and pepper) after turkey is cooked, in a big bowl mix ricotta, frozen chopped spinach. Put a thin layer of ziti mix in pan, add sauce and shredded mozzarella cheese and repeat.
I make this all the time. Its super easy and quick. I mix everything because my friends and family like it cheezy and you get an even bite of all the ingredients. Its also a good way to get veggies in

Appetizer: spinach & artichoke dip (I have a super easy recipe if you want it) with pita chips, veggies, & bread.
Main Meal: cheesy potatoes (also have a great recipe if you want it!)
Dessert: Cream Puffs from the store drizzled with chocolate and powereded sugar...look fancy and are delilcious but no baking

@Mrs. Champagne: If you want to avoid cooking, what about hitting up Trader Joe's and get some nice cheese and crackers and meat?

My fav go to app is smoked salmon on pumpernickel. I mix cream cheese with dill and capers. Slather that on a bread square or triamngle top with hand shredded salmon. Nestle a caper on top as garnish.

@Mrs. Champagne: we make what we call bacon wraps as a Christmas appetizer-- so good!
You take a package of thinly sliced bacon, cut it in half- and canned WHOLE water chestnuts (I suggest having 2 cans on hand) and you basically just wrap a half slice of bacon around a water chestnut and secure with a toothpick- then bake in the oven at 350 until bacon is cooked through, which is about 30 minutes.
We cook ours on one of those slotted roaster pans so the grease drips off and into the larger pan
***ETA*** soak the toothpicks in water if you'd like, to keep them from getting all weird and burnt looking, we've never done this but I know friends of mine who do it

I always make Creamy Mushroom Casserole for potlucks because it's so easy!
1 (16 oz) package pasta (elbows, spirals, etc)
1 tbsp butter
1/3 cup milk
1 (10.75) can cream of mushroom soup
1 lb cheese (I usually do 12 oz shredded cheddar)
Bring a large pot of water to boil. Add pasta and cook 8 to 10 minutes or until al dente; drain. Preheat oven to 350 degrees F.
In medium saucepan over medium heat, combine butter, milk, mushroom soup, and cheese. Stir until cheese is melted and mixture is smooth. Stir into cooked pasta. Pour into 2 quart baking dish and bake 20 minutes or until top is golden brown.

I've made the cheeseball from Our Best Bites website and it was a hit. Only thing I would change is the amount of salt/flavoring used. Really easy.

Oooh, another DELICIOUS snack is Baked Brie with Fig Spread.
Brie Wheel
Fig Spread
Remove the rind from the top of the brie and place in a baking dish. Cover the top with fig spread. Bake in a preheated 350 degree oven until bubbly and warm-about 15-20 minutes.
Serve with pear slices, apple slices, or crackers.

Little smokies wrapped in a half slice of bacon, secure with a toothpick. Sprinkle with brown sugar...bake at 350 for about 10 minutes...delicious

For something super quick, spread cream cheese on a plate, then chili sauce on top, then baby shrimp or crab meat from the deli. Bring crackers!

Baked brie bites. Cut store bought puff pastry into small rectangles, put a small piece of brie in the middle, fold over and seal edges with a fork. Brush with an egg wash and bake at 350 our so until golden brown. You can also mix it up and put some BlackBerry jam on top of the cheese. Delicious and looks fancy without much work!

another version of baked brie that's super easy and always a crowd pleaser is to use Pillsbury crescent rolls, roll them into one solid square, place a small brie round on top, smother it in jam (any flavour!) and wrap the crescent roll on top. bake at 325 for 20-ish minutes.
my other go-to appetizer that everyone loves is bacon-wrapped dates! super easy and delicious!
