Colcannon is pretty good - it's basically buttery mashed potatoes with cooked cabbage or kale and chopped bacon or ham all mixed into one dish.

You can do sausages and mashed potatoes too.

I love shepherd's pie but I prefer it with regular potatoes. It's so fast especially if you buy a tub of mashed potatoes at the store.

We ate corned beef and cabbage growing up. Really, corned brisket was about the only beef I enjoyed as a kid.

As a grown up, I still make the brisket in a crockpot, but I don't really like cabbage or boiled potatoes so I usually roast potatoes, carrots, and parsnips.
