We make menestra de frijoles a lot at home, it's a really common side dish in Ecuador. We serve it with rice on the side--similar to a red beans & rice kinda thing. This recipe is pretty close to how we make it:

You can get achiote in Mexican markets (or maybe in any market--I always get mine at the Mexican one), though it's mostly used for the red color and could be skipped if you can't find it.
