I like this bedding for our guest room. What color walls and curtains (would have to be plain, right) would you do?

I would do white drapes, so that you can change the bedding whenever you want without having to buy new curtains too. OR I would pull out that pop of yellow in the throw pillow and get curtains that color.
As for wall color, I think a really soft, neutral gray would be pretty.

I'd do a dark grey walls like the little diamond on the comforter (cause I love dark grey bedrooms) and then white curtains or curtains with some other accent color if you plan to use one to decorate with one.

Grey walls, and white or purple curtains.
Id accent with mustard yellow accessories.

I love the dark gray walls in the photos, and I'd add either yellow or gray (patterned) curtains. Here are some that would work well:

My guest room has walls about the color of that throw pillow, and we have slightly off white drapes (I think white is too bright on windows, personally)

I like color, so I would do something bold on the curtains, accent pillow and rug, because those can all be changed easily. I'd probably do a paint match on the light gray (only because our rooms are small and the guest room doesn't get much natural light. And I'd further do a ceramic lamp in a third color.

Target has some really nice ones. I'm partial to the mustard because it pops and goes great with so may other accent colors. I use it in my living room.
We got our rug from Target but I've seen other really nice ones around! Mine has a floral trellis pattern.

I would do all white. But I love white.
