This is our tried and true recipe. Once, at a work potluck my husband didn't label it as dip; people at it in slices thinking it was a quiche!!!
Spinach and Artichoke dip:
1 16ox can of sour cream
1 package of cream cheese
1 frozen package of spinach
1 can or artichokes
2 cloves of garlic
1 package of parmesan cheese
red hot pepper flakes
salt
pepper
Preheat over to 375.
Mix the cream cheese and sour cream together.
Then follow microwave directions for spinach. Drain spinach.
Mince garlic cloves
Chop artichokes
Comebine cream cheese & sour cream mixture with the spinach, garlic, and artichokes.
As you are stirring add almost all the parmesan (save the rest to cover the top).
Then add salt, pepper, and red hot pepper flakes to taste.
Sprinkle rest of parmesan over the top
Bake in oven for about 30 minutes or until brown and bubbly
Let cool and enjoy!

This doesn't have artichokes in it but is a huge hit every time I make it:
2 cups sour cream
1 cup mayo
1 package Knorr's vegetable soup mix
1 package frozen chopped spinach, defrosted and drained
We serve it in a hollowed loaf of pumpernickel.

I am very, very, very against mayo so I use a recipe that doesn't use it. I will also only eat this if it's warm. But here's what I do:
10 oz frozen chopped spinach, thawed and squeezed of all excess water
1 can artichokes packed in water, drained and chopped
8oz cream cheese
8 oz sour cream
2 cups finely shredded sharp cheddar, divided
s&p to taste
Mix all of the above but save about 1/2 cup of cheese to sprinkle on top. I usually add in what I think is a good amount of salt and pepper but taste test it and adjust. Spread into dish, top with remaining cheese, and bake at 350 until bubbly. Usually around 20-30 min

Not a recipe, but I've served Trader Joe's spinach and artichoke dip several times and people have asked me for the recipe!

I use sour cream instead of mayo, and mix the mozzarella into the dip instead of on top. Oh, and I always double it because it goes fast! Serve warm with tortilla chips or sourdough bread chunks.
