I bought chicken breasts for dinner and I need something new to do with it. I've done: teriyaki, baked in honey/garlic marinade, pad thai, beer soaked. I like recipes with a sauce so we can use it on our sides (rice, potatoes, etc.)

@babycanuck: I've enjoyed salsa and cream of chicken! Makes it kinda creamy and kicky. Also Italian dressing and some lemon juice makes a very light marinade. I like the sauce over rice!

Not a sauce recipe, but our new go to. Coat chicken breasts lightly in mayo, cover in panko breadcrumbs mixed with essence of Emeril ( or whatever seasoning you like). Bake on 350 until done. The mayo keeps the chicken moist and the breadcrumbs crispy. So good.
ETA: breadcrumbs should be all around like shake n bake!

@babycanuck: Chicken strips with pesto and mozzarella on them! We serve it over either pasta or rice. Super easy and absolutely delicious!
You just coat the chicken strips in pesto and then you put a thin slice of mozz on each one. Cook like normal!

Stupid easy, lazy recipe: mix a can of cream of chicken soup with 1/4C white wine, smear it over chicken breasts in a baking dish, sprinkle with a handful of shredded cheese (cheddar, monterey jack, whatever you've got), then sprinkle half a handful of breadcrumbs over the top. Bake for an hour at 350.

dip in egg yolk and coat in mixture of crushed corn flakes, parmesan cheese, and 1/2 ranch packet! bake at 350 for 25 minutes! so good.

Always been a fan of maple-dijon or "man pleasing" chicken. It's really simple, and flavorful.

I'll sometimes slice them up and stir-fry with whatever veggies I have on hand. I'm also a huge fan of the honey mustard garlic bake which is so easy!!

We tried this the other night and enjoyed it. We used panko instead of regular breadcrumbs and baked the chicken on a cooling rack on a cookie sheet so both sides stay crispy.

Sweet & sour chicken: Mix apricot jam with Russian dressing & onion soup mix. I eyeball the measurements but I think one jar, one bottle & 2/3rds a packet is about what you'd need for 4 chicken breasts. Pour over chicken in greased pan. Bake on 350 for about 45 minutes or until done. Serve over rice with broccoli on the side.

@deerylou, I've made that before and forgotten about it! that's a delicious chicken recipe!
I do a lot of boring chicken. I mostly just marinade it and then grill it. I like it tikka masala style, though!
