This is our third week successfully planning meals! Makes the week so much less stressful.
Mon: broiled steak, potatoes in crockpot, asparagus
Tues: Beanless chili (made ahead yesterday)
Wed: Shrimp tacos
Thurs: Pork tenderloin, shallots, asparagus (have a lot to get rid of!)
Friday: leftover chili

@grizz, we just had that macaroni casserole 2 weeks ago! i ate it ALL WEEK LONG. Yum.
@mrskc, Yeah it's a crockpot recipe! I'm using a tenderloin. It's 2 cans of root beer. I figure DH can put bbq sauce on it afterwards and I can eat mine dry. I'm going to add some onions and a can of chipotle peppers in adobo sauce to the crockpot, though. We both love crockpot onions and spicy food.

@mrskc: @Beebug: Another way I do is if you throw in a 1/2 -1 package of ranch dressing mix with that cream of mushroom soup...so good!

@fussygal: mine is pretty basic. Just quinoa, cherry tomatoes, cucumber, red onion and feta. Then I use a dressing from one of our local stores...it's a lemon/garlic dressing that I LOVEEEE. I'm sure it would be easy enough to make at home with olive oil, lemon juice and garlic...but for some reason the one from the store is a bit more delicious
I really enjoy this quinoa recipe as well: http://www.bettycrocker.com/recipes/quinoa-pilaf-with-salmon-and-asparagus/e0f2383f-e6f7-4cda-b6fd-982db645d635. In my opinion, it tastes even better the next day as a cold leftovers. I probably poured a bit of the same dressing
