I’m planning on doing two small butterflied turkeys this year, and I plan to use the Serious Eats method with dry brining. I’m doing two because I couldn’t find one big one, and I was already planning on doing two separate methods because my SIL is nursing her MSPI baby and I was going to make a dairy free turkey and pumpkin pie for her.

We also always do mashed potatoes with smoked Gouda. Super good!
