I have a 5 lb pork shoulder that's been in the slow cooker for 6+ hours that is going to be yummy pulled pork! The smell in the house is divine...

@FutureMrsMcK: DH is lactose intolerant but we recently learned that he can handle goat cheese so I've been experimenting a lot. So nice having Italian food back in my life!

trying to decide... I have cabbage, celery, parsnips, carrots, kale, leek, and pumpkin and I'm trying to decide how to throw together a soup using most of it... hmm!

@FutureMrsMcK: I make my own spice rub (seasoned salt, pepper, cumin, oregano, chili powder, brown sugar, garlic) and throw it in the slow cooker w/a sliced onion and 3 cups of beef broth. Then once it's time to shred it, then we mix in whatever bottled bbq sauce that we have on hand.
I'm hungry and it's only 4:15...

@MungBean: That sounds lovely too! I bought a few butternut squash (squashes?) yesterday...going to make a big pot of soup this week. I had originally planned on making sweet potato and black bean enchiladas, but forgot the sweet potatoes. I've been obsessed with pumpkin lately, so I always have a few cans...in the past week I've made fettuccine with a pumpkin cream sauce and pumpkin cornbread.

I just randomly made something up so I hope it's good! I roasted some acorn squash and poached some cranberries in apple cider and I'm letting them cool and I'll serve them on top of a red leaf lettuce salad with sliced onion and toasted almonds and chicken for my husband. I wanted something fall-ish but still light.

only didn't use tofu or peas, added cabbage, 1 can of coconut milk, fish sauce instead of soy, and added a spoon of peanut butter, no salt.
Really excited to eat dinner!
