I know there are quite a few Korean Bees here. So what do I do with a big jar of soured kimchi? DH thinks kimchi is already sour, so ndb, but I know the difference! My old roommate would make a soup (I think, "ji-gae?"), but I've never made it. What do you do with it? Maybe kimchi-fried-rice? But not sure if the sour taste goes away?

You could make the kimchi fried rice but don't put the juices in. Use hot red pepper paste and put some meat in there-- like bulgogi.
You could do just a kimchi jigae without as much tofu too.

Kimchi fried rice or kimchi jigae! You can also make a kimchi pancake (jeon). My mom adds the rice ovalets when she makes this and it's so yummy!
