I have watched DH gag before while trying to choke down some of my worst failed attempts at cooking. He didn't ate it all without gagging so it must not have been to bad...

I saute onions, garlic, grated carrots and then add the tomatoes. Add 1-2 tbsp of sugar and a little balsamic vinegar and simmer before pureeing it. I usually add fennel and crushed red pepper flakes. It is my go to sauce (got it from epicurious) and i like how delicate it tastes. Sorry you didnt have much luck with your sauce!

I like my gravy (or sauce) to be really rich. I saute onions and garlic with sausage. I also pan fry my meatballs with olive oil. Everything gets dumped into the crockpot and seasoned with crushed red pepper, parm cheese, mozz cheese, pepper, italian seasonings, and a bit more garlic powder because I'm a garlic fanatic. I also put a whole onion in the gravy to cook. I let it all cook on low for about 6-8 hours.
