This was one of my LO's first foods that was her favorite! There is a lot of liquid to it (almost like applesauce) if you put it in a food processor.

I made my first one last week! If you google "how to roast spaghetti squash" a bunch of simple recipes come up. Basically cut it in half while raw (BE CAREFUL - there are videos on youtube showing you how!), spoon out the seeds, then place facedown on a baking sheet with a little water and roast at 350 for 30 mins (or something - I can't remember the specifics). After it's cooked just pull out the cooked squash with a fork and it will break apart and look like spaghetti. We ate it with spaghetti sauce and frozen meatballs from Trader Joe's and roasted broccoli! Delicious!

There is also a Bonefish copy cat recipe for some honey ginger spaghetti squash that is really good! I made it for thanksgiving last year.

Easiest recipe: poke holes and nuke in microwave for 10 mins. Scrap out squash and satuee with a can of diced tomatoes, a can of white beans and a ton of garlic. YUM!

@crash806: We just learned this trick with Acorn squash! I can't wait to cook all kinds of great squash this fall now that I know I can cook quickly. I also have a convection microwave (can act like a convection oven and you set to a degree). Any idea what the baking time would be for a convection oven?

@yin: I don't like squash at all...I'm afraid! hahaha. Hopefully, I can hide the taste with a meaty pasta sauce?

@Thehistoryofus: We've done it at 375 for an hour for a regular ole oven. We tend to undercook it a bit so we can let it cook a bit longer on the stove w/the tomatoes and beans.
@autumnlove: We've done spaghetti squash with a meaty sauce before, doesn't have the same effect as pasta but taste good in a different way!

I LOVE spaghetti squash-- but I love all winter squashes. It's really hard to cut, so I poke a couple of holes with a knife tip or something and microwave just for a couple of minutes, which softens it up enough to cut it in half. Then I scrape out the seats and roast it for however long-- whatever google says. Then scrape out the insides with a fork and eat like pasta. It tastes different than pasta but delicious, and not really like winter squash, either.

We bought one the other day out of curiosity and it was easy to prepare! I didn't love the taste; I think it needs a pretty hearty sauce instead of veggies/olive oil/lemon like we used. Save the seeds--you can roast them just like pumpkin seeds and they are delicious!

We use spaghetti squash as a sub for pasta every time I make my spaghetti sauce. We actually have half a squash sitting in the fridge leftover from the other night... thinking I might try a sautee kinda like @crash806: suggested now!

@autumnlove: Good luck! I'm not a squash person but I find I can eat this pretty easily if I top it with a meaty spaghetti sauce, sloppy joe or other heavily flavored/spiced meat or sauce!

@autumnlove: Ain't nobody got time to roast it in the oven. Slice that sucker in half, scoop out the seeds and microwave it (sliced side up, covered in plastic if you can) for approx 15 min or until you can pull spaghetti like strands out of it with a fork!
