I like finding easy weeknight meals so I thought I'd share one I put together last night.

Ingredients I had on hand:
1 box of Aldi's organic free range chicken broth (which is super cheap, btw)
Carrots
Celery
Onion
1 bag frozen Trader Joe's Chicken Cilantro Mini Wontons
1 bag frozen mini meatballs

I heated up the broth and diced the onions, carrots and celery. Sautéed the veggies until the onions were soft-ish and then threw them all in the broth. When the carrots were tender (about 15 minutes), I threw in the meatballs for 5 minutes. Then I tossed in the wontons and let the soup come back to a boil (about 2 minutes).

That's it! All three of us loved it.
